Hachis Parmentier (French potato beef bake)

    This is a recipe for the classic French dish named after Antoine Parmentier (1737-1813), who convinced French cooks to give potatoes a try.

    Serves: 6 

    • 1kg potatoes
    • 100g butter
    • 250ml warmed milk
    • salt and ground black pepper to taste
    • 1 onion
    • 1 clove garlic
    • 500g minced beef
    • other seasonings or minced parsley (optional)
    • 1 egg
    • 50g cheese

    1. Peel potatoes, cut in half and boil in salted water until easily pricked with fork, about 20 minutes. Drain water, add half of the butter and mash.
    2. Add warmed milk and mash together to smooth consistency. Add more salt, if needed.
    3. Mince onion and garlic. Melt half of the remaining butter in a pan and saute onion and garlic until soft.
    4. Add minced beef and cook until browned. Add salt and pepper to taste. You can also add your favorite seasonings at this point or some chopped parsley.
    5. Fry for a few more minutes. Process to finer texture by using immersion blender if desired.
    6. Add egg to meat mixture and adjust seasonings.
    7. Preheat oven to 180 C / Gas 4. Grease baking dish.
    8. Add 1/2 of mashed potatoes.
    9. Then layer meat mixture on top of potatoes.
    10. Top with remaining potatoes. Make wavy pattern on top with a fork.
    11. Cube the remaining butter and dot on the potatoes. Sprinkle with grated cheese.
    12. Bake in the preheated oven till bubbly, 20 minutes.
