Massepain cake

    This sweet and soft vanilla cake is a Mauritian specialty. Better served without frosting, as it is already sweet and nice as it is. Can also be used for cupcakes.

    Ingredients
    Makes: 1 cake

    • 175g caster sugar
    • 200g plain flour
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 175g butter or margarine
    • 3 eggs
    • 1 teaspoon vanilla extract (optional)

    Method
    Prep:10min  ›  Cook:35min  ›  Ready in:45min 

    1. Preheat the oven to 180 C / Gas 4.
    2. Sift together the flour, baking powder and salt; set aside.
    3. In another bowl beat the butter until creamy, then add the sugar and beat for 2 to 3 minutes. Add the eggs one at a time, beating after each addition.
    4. Fold flour mixture into butter mixture and put into cake tin.
    5. Bake for 35 minutes, or till a skewer inserted in the centre comes out clean.
