Fonio is an ancient grain, rich in protein and low in sugar, that's a great alternative to quinoa. In this recipe, it is boiled with toasted black sesame seeds to make a quick and delicious gluten-free side dish.

2 tablespoons black sesame seeds
1/8 teaspoon salt

Heat oil in a small pan. Add sesame seeds; toast until fragrant, about 6 minutes.
Bring water to the boil in a saucepan. Stir in toasted sesame seeds, fonio and salt. Bring water back to the boil. Reduce heat; simmer, covered, until water has been absorbed, about 5 minutes. Fluff fonio with a fork before serving.
