    This smooth cauliflower mash flavoured with bacon and smoked Gouda cheese is a low carb, gluten-free side dish you'll want to make again and again.

    Ingredients
    Serves: 4 

    • 4 slices bacon
    • 400g cauliflower florets
    • 3 tablespoons whipping cream
    • 2 tablespoons butter
    • 1/2 teaspoon coarse sea salt, or to taste
    • 1/4 teaspoon freshly ground black pepper
    • 1/4 teaspoon garlic powder
    • 40g grated smoked Gouda cheese, or to taste

    1. Place bacon in a large pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on kitchen roll; slice into small pieces.
    2. Combine cauliflower, cream, butter, 1/2 teaspoon salt, 1/4 teaspoon pepper and garlic in a pot; bring to the boil. Cook until cauliflower is soft, 18 to 20 minutes.
    3. Transfer cauliflower mixture carefully to a food processor. Add sliced bacon and smoked Gouda cheese; blend until smooth and creamy. Season with salt and pepper.

    The real recipe that I found online for this dish for this calls for microwaving the cauliflower for 18-20 minutes, not cooking on the stovetop. You arent going to be able to cook this on the stovetop for that long in a few tablespoons of liquid.. it will burn. The recipe, when cooking the vegetables in the microwave is delicious..One star for the wrong directions in the personal and published recipe.. 5 stars when you make it the way the original author intended  -  15 Mar 2017  (Review from Allrecipes US | Canada)
