Goats cheese and chive scrambled eggs

    Scrambling fresh eggs with crumbled goats cheese and fresh chives is a simple but delicious option for breakfast or brunch. Add a dash of chilli sauce for anyone who prefers their eggs spicy!

    Serves: 2 

    • 4 eggs
    • 1 tablespoon single cream
    • 1/2 teaspoon salt, or to taste
    • 1/2 teaspoon freshly ground black pepper, or to taste
    • 40g goats cheese, crumbled
    • 1 tablespoon freshly chopped chives
    • 1 tablespoon butter
    • 2 dashes sriracha chilli sauce (optional)

    1. Whisk eggs, cream, salt and pepper together in a bowl. Whisk in crumbled goats cheese and chives.
    2. Melt butter in a pan over medium-high heat. Pour in egg mixture; cook, stirring occasionally, until set, about 5 minutes. Transfer to serving plates; draw a line down each plate with chilli sauce.
