Lobster tails in Champagne

    Perfect as a romantic dinner for two, lobster tails are sauteed in a champagne cream sauce in this recipe.

    Serves: 2 

    • 2 (225g) frozen lobster tails, rinsed
    • 160ml Champagne
    • 2 spring onions, minced
    • 1/4 teaspoon salt
    • 60ml whipping cream
    • 2 tablespoons unsalted butter, cut into tablespoons

    1. Combine lobster tails, champagne, spring onions and salt in a pan; bring to the boil. Reduce heat to medium-low, cover the pan and simmer until lobster is cooked through, about 15 minutes. Transfer lobster to a plate.
    2. Stir cream in champagne sauce in pan. Bring to the boil and cook until sauce is reduced to about 75ml, 5 to 10 minutes.
    3. Whisk butter into champagne sauce, 1 tablespoon at a time, until sauce is smooth. Cover the pan and remove from heat.
    4. Remove lobsters tails from shells and slice into medallions. Spoon champagne sauce over lobster medallions.

    I made this for the first time on Christmas Eve for something entirely different. I purchased a few pounds of lobster tails (7-8), 6-8 oz size which were about $5.99 a piece. I cooked with with an inexpensive brut champagne that I love. It was a big hit and extremely easy. The cook time for the tails was accurate as I left the meat in the shell as they cooked.
