Leftover Champagne pancakes

    This is a delicious way to use up any leftover bubbly the morning after a celebration like Valentine's Day or New Year's!

    Serves: 12 

    • 240ml buttermilk
    • 2 eggs
    • 2 tablespoons butter, melted
    • 185g plain flour
    • 2 tablespoons caster sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 180ml Champagne

    1. Whisk buttermilk, eggs and butter together in a bowl. Mix flour, sugar, baking powder and salt together in a separate bowl. Whisk flour mixture into buttermilk mixture until smooth. Set pancake batter aside until bubbling, 10 to 15 minutes. Pour champagne into batter; stir gently.
    2. Grease a non-stick pan lightly and heat over medium-high heat. Pour a ladle of pancake batter onto the pan; cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, 1 to 2 minutes more. Repeat with remaining pancake batter.


    Make homemade buttermilk by mixing 250ml of milk with 1 tablespoon lemon juice or vinegar. Let sit 10 minutes before using.

    These turned out well after adding a little more flour to the batter. The first few I made were too thin for me. They tasted fine--I ate them with sliced strawberries and whipped cream. I probably won't try them again--the champagne really didn't add that much more flavor than regular pancakes. I would rather just drink any leftover champagne.
