For the syrup: In a pot put the 3 cups of sugar and 3 cups of water. Bring to the boil. Turn off the heat then let it cool.
Melt the butter and pour all over the dough then mix all together. Once it's all mixed together split the dough into small pieces. Grease a round oven tray (deep tray) and then spread half the dough and press down until your hands another tray the same size.
Slice the mozzarella and place the cheese all over the dough evenly and then cover the cheese with the remaining dough. Press the dough down again.
Preheat the oven to 200C (400F) and bake the kunefe until the top turns light brown. Take out the oven and turn upside down. Bake the other side until it turns light brown. Once cooked, pour the cooled syrup all over the hot kunefe and put aside for 5 minutes before serving.
After the syrup has been absorbed, slice the kunefe and then garnish with the ground nuts.
