Chicken noodle salad in a jar

    Layers of veggies, chicken and noodles are placed in jars with tight-fitting lids. Whenever you're ready to eat - pour in the peanut dressing, shake and enjoy!

    Serves: 6 

    • 3 carrots, peeled and julienned
    • 2 red peppers, julienned
    • 135g chow mein noodles
    • 435g cooked chicken, shredded
    • 170g sliced romaine lettuce
    • 6 (1L) jars with lids
    • Dressing
    • 65g creamy peanut butter
    • 3 tablespoons water
    • 2 tablespoons reduced salt soy sauce
    • 1 tablespoon vegetable oil
    • 1 tablespoon caster sugar
    • 2 1/2 teaspoons rice vinegar
    • 1 teaspoon ground coriander

    1. Layer sliced carrots, sliced red peppers, noodles, shredded chicken and sliced lettuce in each jar.
    2. Whisk peanut butter, water, soy sauce, vegetable oil, sugar, rice vinegar and ground coriander in a bowl until dressing is smooth. Chill salads and dressing, covered, until ready to serve. Serve jars with dressing on the side.

    This is very tasty, but being 6 servings (although a good meal prep), I think at minimum it should serve 2 peeps for 3 days, 6 days a week for one would be so very boring and it's not the most nutritious recipe out there.     Okay I haven't made this yet, but plan to. However, the noodles will get really soggy if they sit in this so I would suggest putting them in a small snack zip lock bag and lay on top. you would definitely need a hardy lettuce or by the 6th day the lettuce is going to be wilted and slimy. I would put the dressing in a small container and add when I'm ready to eat--this may have been in the directions, but I can't see them and type this.
