White chocolate liqueur truffles

    Truffles are the easiest sweets to make (and personalise) for any special occasion, such as birthdays, Valentine's day or as food gifts around Christmas. The only cooking required is melting chocolate and they keep for a few weeks in the fridge. In this recipe, I normally use Malibu® as the liqueur, add some lemon zest and roll them in desiccated coconut.

    Ingredients
    Makes: 24 truffles

    • 250g white chocolate
    • 60ml cream
    • 2 tablespoons liqueur
    • 100g fine-textured dry ingredients, such as desiccated coconut or crushed biscuits, divided

    Method

    1. Melt chocolate and cream; stir in 2 tablespoons of your favourite liqueur and half of the dry ingredients. Chill mixture in fridge until it becomes more solid, about 1/2 an hour.
    2. Scoop out teaspoon-sized balls of white chocolate truffle mixture and arrange on a tray lined with baking paper. Chill the truffles for another 1/2 hour.
    3. Remove the tray of truffles from the fridge and roll in the remaining dry ingredients until well coated.
    4. Serve or store in the fridge.
