Rich, fudgy and slightly healthier brownies

    Rich and fudgy, these brownies are a slightly healthier version of the original. We've reduced the sugar and used wholemeal flour.

    • Brownies
    • 55g butter
    • 100g caster sugar
    • 2 eggs
    • 80ml apple sauce
    • 1 teaspoon vanilla extract
    • 30g cocoa powder
    • 40g wholemeal flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking powder
    • Icing
    • 3 tablespoons butter, softened
    • 3 tablespoons cocoa powder
    • 1 tablespoon honey
    • 1 teaspoon vanilla extract
    • 60g icing sugar

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20cm square cake tin.
    2. To make the brownies: Melt 55g butter in a large saucepan over low heat. Remove from heat and stir in 100g caster sugar, eggs, apple sauce and 1 teaspoon vanilla extract. Beat in 30g cocoa powder, flour, salt and baking powder. Spread into prepared tin.
    3. Bake in preheated oven until brownies are just set in the centre, 20 to 25 minutes.
    4. To make the icing: Combine 3 tablespoons butter, 2 tablespoons cocoa powder, honey, 1 teaspoon vanilla extract and icing sugar in a bowl; beat until smooth. Spread on top of brownies while they are still warm.

    These turned out YUMMY! Due to allergies that my daughter has, we made a few substitutions. I used Crystalized Fructose instead of sugar, Shortening instead of Butter, Brown Rice Flour instead of wheat. For the brownies, I used 1 tsp Maple syrup instead of Vanilla and I replaced the tsp of vanilla with 1/2 tsp Mint extract in the frosting.     These brownies are pretty good! I prefer chewy brownies, these are cake like brownies. I added 1/4 cup chopped walnuts, and did not use the frosting.
