Rhubarb relish

    Growing up we always had an abundance of rhubarb from the garden. This was a way for my mum to use it up and treat us as well! Nice addition to ice cream or to serve beside a slice of sponge cake. Works well with roast meats, too. You can use any berries instead of strawberries.

    Ingredients
    Serves: 8 

    • 500g packed brown sugar
    • 250g finely chopped rhubarb
    • 325g chopped strawberries
    • 120ml white vinegar
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground allspice
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon ground nutmeg

    1. Stir brown sugar, rhubarb, strawberries, vinegar, cinnamon, allspice, cloves and nutmeg together in a saucepan over medium heat. Cook and stir until relish thickens, about 30 minutes. Cool, transfer to an airtight container and store in the fridge.

    Tip:

    To thicken the relish more quickly add 1/4 teaspoon cornflour.
