Cinnamon pancakes

    Cinnamon added to the batter adds an unexpected and delightful flavour to these easy fluffy pancakes.

    • 125g plain flour
    • 2 1/2 tablespoons caster sugar
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 2 teaspoons ground cinnamon
    • 235ml milk
    • 2 eggs
    • 55g butter, melted

    1. Mix flour, sugar, baking powder, bicarbonate of soda and cinnamon together in a bowl.
    2. Whisk milk, eggs and melted butter together in a separate bowl. Pour milk mixture into flour mixture. Whisk until well blended.
    3. Heat a lightly oiled non-stick pan or griddle over medium heat. Use a ladle to pour pancake batter onto the pan and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining pancake batter.
