Toasted muesli

    A lovely toasted muesli. If using gluten free oats it can be gluten free. If you prefer a more nutty or fruity muesli then you can easily adapt this recipe to your taste. You can add bran flakes or wheatgerm too if you want more fibre; I don't as I'm wheat intolerant and started making my own as its cheaper then wheat free alternatives. I also find it hard to find a muesli out there that I like all the ingredients in, and making my own allows me to have in it what I like, and keep out what I don't!

    Serves: 25 

    • 900g rolled oats
    • 80g desiccated coconut
    • 125g mixed seeds (eg sunflower, sesame, linseeds)
    • 200g chopped nuts of choice
    • 120ml unflavoured oil, such as rice bran oil
    • 170g honey
    • 110g soft brown sugar
    • 225g dried fruit (eg raisins, sultanas, cranberries, chopped apricots)

    1. Place oats, coconut, seeds and chopped nuts in a large roasting tin.
    2. Put oil, sugar and honey into a saucepan and heat gently until sugar dissolves.
    3. Pour oil mix over the oats mixture and stir thoroughly.
    4. Bake at 140 C / Gas 1 for 60 to 70 minutes, until lightly brown, stirring 2 to 3 times while baking. When removed from oven give a good stir and leave to cool.
    5. Once cool, mix in dried fruit and store in an airtight container.


    Not all of the nuts have to be chopped, ie peanuts can be broken into halves, or you could buy almond slivers and pumpkin seeds or small nuts don't need chopping. I find it best to stir all the mixture with a wooden spoon.
