Oven-roasted courgettes with Parmesan cheese and breadcrumbs is a lovely cheesy side dish.
I followed the recipe exactly but it took ages and ages to cook. After an hour I gave up, served a different vegetable and put the courgettes in the freezer to have another go at cooking them at a later date. Not my best success, don’t know what I did wrong. Maybe slicing the courgettes rather than dicing them might help next time. - 07 Nov 2017
This was delicious. I didn’t add breadcrumbs because my daughter is cutting down on carbohydrates, but I don’t think it needed it. Next time I will dice fresh tomatoes and sprinkle over it before I serve it. And top generously with Parmis on cheese. - 07 Jan 2019 (Review from Allrecipes US | Canada)
