Homemade natural yogurt

    6 hours 15 min

Natural yogurt, without added sugar or preservatives, is quite easy to make at home! After you get the hang of it, you can use a few tablespoons from one batch to start another.

    Makes: 1 litre of yoghurt

    • 150g of natural yogurt with active cultures
    • 1L of full fat milk (see note)

    1. Bring the yogurt to room temperature - this will prevent it cooling down the milk too quickly.
    2. Heat the milk to a temperature of 40 to 45 C.
    3. Add natural yogurt ; stir and until thoroughly mixed.
    4. Pour the mixture into a thermos flask, yogurt maker or a large bowl, covered with a tea towel to keep it warm; set it in a warm place for at least 6 to 8 hours.
    5. After 6 to 8 hours, you can split the yogurt up into smaller portion-sized containers; store in the fridge.

Do not use UHT milk. Fresh pasteurised milk is fine.

If the yogurt is not thick enough, it might mean that the milk was too hot when mixed with yogurt or the temperature was too low during the resting time (6-8 hrs). It could also be due to the yogurt starter - try using a different brand that has more live cultures.
