Kale with pine nuts and Parmesan

    Kale is cooked in butter and tossed with toasted pine nuts and fresh Parmesan cheese in this easy side dish.

    Serves: 6 

    • 35g pine nuts
    • 55g butter
    • 1 bunch kale - stems removed, roughly chopped and rinsed
    • 1 teaspoon white vinegar
    • salt and freshly ground black pepper to taste
    • 40g grated Parmesan cheese

    1. Toast pine nuts in a pan over low heat until golden brown and fragrant, about 5 minutes.
    2. Melt butter in a large pan over medium heat. Place kale in the melted butter and cook until tender, 10 minutes.
    3. Toss cooked kale with vinegar in a serving bowl; season with salt and pepper. Sprinkle with Parmesan cheese to serve.

    Not sure what happened, but this does NOT make 6 servings! This was my main dish, but barely enough for 2. I had to add sun dried tomatoes, and sliced toasted almonds, to try to stretch it out for my family.
