Roasted white asparagus

    White asparagus is brushed with olive oil, sprinkled with herbes de Provence and roasted until golden in this quick side dish recipe.

    Ingredients
    Serves: 4 

    • 1 bunch white asparagus
    • 2 tablespoons olive oil
    • 1 1/2 teaspoons herbes de Provence
    • 1/4 teaspoon salt
    • 1/8 teaspoon freshly ground black pepper

    Method

    1. Preheat oven to 200 C / Gas 6.
    2. Trim the bottom of each asparagus stalk. Lay flat on a cutting board and peel lengthwise. Transfer to a casserole dish and brush with olive oil. Sprinkle herbes de Provence, salt and black pepper over asparagus.
    3. Roast in the preheated oven until lightly browned, about 20 minutes.

    White asparagus, delicate yet full of flavour, very nice. The herbs are delicate and the roasted flavour just seals the deal. I served this with some Parmiggiano Reggiano and thought it went very well with it, but with other more flavourful cheeses, it seemed to ruin the experience.
