Herb butter

    If you want to give a bit of a punch to your dishes try this herb butter. I love it on my chicken before cooking, or on a steak or baked potato after cooking.

    Makes: 1 stick of butter

    • 2 sprigs fresh rosemary
    • 2 sprigs fresh thyme
    • 125g butter, softened
    • 1 tablespoon salt
    • 1 teaspoon garlic powder
    • 1 teaspoon pepper

    1. Remove the leaves from the rosemary and thyme. They can be chopped or left whole depending how chunky you like the butter to be.
    2. Combine the butter with the rosemary, thyme, salt, garlic powder and pepper. Mix with your hands, or with an electric whisk, till evenly combined.
    3. Lay out a sheet of baking parchment or greaseproof paper, then add the butter and roll the paper to create a log. Place in the fridge to become firm.
    4. To serve, slice and place on the steak, baked potato or similar.
