Herb butter

If you want to give a bit of a punch to your dishes try this herb butter. I love it on my chicken before cooking, or on a steak or baked potato after cooking.

Ingredients
Makes: 1 stick of butter
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 125g butter, softened
- 1 tablespoon salt
- 1 teaspoon garlic powder
- 1 teaspoon pepper

- Remove the leaves from the rosemary and thyme. They can be chopped or left whole depending how chunky you like the butter to be.
- Combine the butter with the rosemary, thyme, salt, garlic powder and pepper. Mix with your hands, or with an electric whisk, till evenly combined.
- Lay out a sheet of baking parchment or greaseproof paper, then add the butter and roll the paper to create a log. Place in the fridge to become firm.
- To serve, slice and place on the steak, baked potato or similar.
