Vegan sweet potato cake

    A moist and luscious loaf cake made with sweet potatoes, banana, cinnamon and pecans, modified for a vegan diet.

    • 135g chopped raw sweet potato
    • 300g caster sugar
    • 120ml vegetable oil
    • 1 over-ripe banana
    • 220g plain flour, sifted
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon salt
    • 1/8 teaspoon baking powder
    • 80ml water
    • 55g chopped pecans

    1. Cook sweet potatoes in boiling water until tender, 20 to 30 minutes; drain. Place sweet potatoes in a bowl and mash until smooth.
    2. Preheat oven to 180 C / Gas 4. Grease a 900g loaf tin.
    3. Stir sugar and oil together in a bowl until well mixed; beat in banana. Combine flour, bicarb, cinnamon, nutmeg, salt and baking powder in a bowl. Alternate stirring the flour mixture and the 80ml water into the sugar mixture until combined. Mix in sweet potatoes and pecans; stir until mixture is smooth. Pour into the prepared loaf tin.
    4. Bake in the preheated oven until top is golden brown, about 1 hour.
