Barbecued cantaloupe

    Chunks of cantaloupe melon are threaded onto wooden skewers and brushed with honey butter and chopped mint. Serve it with big scoops of vanilla ice cream.

    Ingredients
    Serves: 4 

    • 1 cantaloupe - peeled, seeded and cubed
    • 60g butter
    • 120ml honey
    • 1 tablespoon freshly chopped fresh mint
    • 4 wooden skewers

    Method
    Prep:15min  ›  Cook:6min  ›  Ready in:21min 

    1. Preheat barbecue for medium heat.
    2. Thread the cubes of cantaloupe onto 4 skewers. In a small saucepan, heat butter with honey until melted. Stir in mint. Brush cantaloupe with honey mixture.
    3. Lightly oil the barbecue grate. Cook skewers for 4 to 6 minutes, turning to brown all sides. Serve with remaining sauce.

    Grilled Cataloupe? You bet, this recipe was awesome. I would have never suspected grilled fruit could taste so good until I tasted this recipe at a friends house.     I made this for a BBQ dinner party last night. Everyone thought I was weird when I started putting cantaloupe on the grill, but then they tried it. Everyone loved it! I was pleasantly surprised myself. I served the cantaloupe over ice cream and poured the sauce on top. I will definitely make this again.
