Slow cooker aubergine curry

    Even people who are not fans of aubergine have enjoyed this vegan slow cooker spicy aubergine curry.

    Ingredients
    Serves: 4 

    • 3 aubergines, cut into cubes
    • 2 onions, diced
    • 10cm fresh ginger, finely diced
    • 12 cloves garlic, finely diced
    • 6 Thai chillies, finely diced
    • 1 tablespoon cumin seeds
    • 1 tablespoon chilli powder
    • 1 tablespoon salt, or to taste
    • 1 teaspoon turmeric
    • 4 tablespoons vegetable oil, or as needed

    Method

    1. Combine all the ingredients in the slow cooker and mix well. Cook on Low for 5 hours. If the aubergine starts to dry out, add a little more oil.
    2. Serve with rice and/or warm flatbreads.
