180g wholemeal flour
100g brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
180ml apple sauce
175g Greek yogurt
4 tablespoons skimmed milk
3 tablespoons vegetable oil
2 tablespoons skimmed milk, or as needed
150g blueberries, or more to taste
80g coarsely chopped walnuts

Preheat oven to 180 C / Gas 4. Grease muffin tin or line with paper cases.
Combine flour, oats, brown sugar, baking powder and salt in a large bowl; stir in apple sauce, yogurt, 4 tablespoons skimmed milk, vegetable oil and egg. If the dough is a bit too dry, add extra milk 1 tablespoon at a time. The mixture should be about the consistency of a thick porridge.
Fold blueberries and walnuts into the mixture. Spoon into prepared muffin tin or paper cases until almost full.
Bake in preheated oven until a skewer inserted into the centre comes out clean, 15 to 20 minutes.
