Superfood blueberry muffins

    These muffins are made with wholemeal flour and packed with oats, antioxidant-rich blueberries, apple, walnuts and Greek yogurt.

    Makes: 14 muffins

    • 180g wholemeal flour
    • 40g oats
    • 100g brown sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 180ml apple sauce
    • 175g Greek yogurt
    • 4 tablespoons skimmed milk
    • 3 tablespoons vegetable oil
    • 1 egg
    • 2 tablespoons skimmed milk, or as needed
    • 150g blueberries, or more to taste
    • 80g coarsely chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease muffin tin or line with paper cases.
    2. Combine flour, oats, brown sugar, baking powder and salt in a large bowl; stir in apple sauce, yogurt, 4 tablespoons skimmed milk, vegetable oil and egg. If the dough is a bit too dry, add extra milk 1 tablespoon at a time. The mixture should be about the consistency of a thick porridge.
    3. Fold blueberries and walnuts into the mixture. Spoon into prepared muffin tin or paper cases until almost full.
    4. Bake in preheated oven until a skewer inserted into the centre comes out clean, 15 to 20 minutes.

    Delicious, healthier recipe for a blueberry muffin! My almost three year old and I eat them right up! I try to stick to the recipe to review it, but a couple minor changes here.... 1. I used whole milk not skim, as that's what we have and use and I believe whole is actually healthier for you anyways. 2. I used 1.5 cups of blueberries and no walnuts.
