    Using overripe bananas yields super moist muffins in this easy recipe for the ultimate homemade muffins, perfect for a packed lunch treat.

    Ingredients
    Serves: 12 

    • 190g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 1 dash ground nutmeg
    • 3 very ripe bananas
    • 100g caster sugar
    • 75g butter, melted
    • 35g soft brown sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 30g chopped walnuts (optional)

    Method
    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 180 C / Gas 4. Grease a muffin tin.
    2. Sift flour, baking powder, bicarb, cinnamon, salt and nutmeg together in a small bowl.
    3. Mash bananas in a large bowl. Mix in caster sugar, melted butter, brown sugar, egg and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the mixture. Divide evenly among the muffin cups.
    4. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 20 minutes.

    Made them last night for my son, who was home from college. I've used many different recipes for banana muffins but this is by far the best one yet. I didn't have walnuts but, since my son has a sweet tooth, I added a few choc chips. So moist and delicious. I highly recommend this recipe.  -  20 Nov 2017  (Review from Allrecipes US | Canada)
