Ultimate banana muffins

    Using overripe bananas yields super moist muffins in this easy recipe for the ultimate homemade muffins, perfect for a packed lunch treat.

    Serves: 12 

    • 190g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 1 dash ground nutmeg
    • 3 very ripe bananas
    • 100g caster sugar
    • 75g butter, melted
    • 35g soft brown sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 30g chopped walnuts (optional)

    1. Preheat oven to 180 C / Gas 4. Grease a muffin tin.
    2. Sift flour, baking powder, bicarb, cinnamon, salt and nutmeg together in a small bowl.
    3. Mash bananas in a large bowl. Mix in caster sugar, melted butter, brown sugar, egg and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the mixture. Divide evenly among the muffin cups.
    4. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 20 minutes.

They are super moist, tender, and just bursting with banana flavor in every bite Followed the recipe to the letter and wouldn’t change a thing. House of Cochrane thanks for sharing this awesome recipe, it’s going into my Favorites folder.****UPDATE 6.6.18: This is one of my favorite muffin recipes, and I make it often. Today I had some VERY ripe bananas which needed to be used up, and a few blueberries. I dusted the blueberries with a little flour and added them to the batter.
