For a vegetarian version, cook some chopped red or green pepper and mushrooms in the butter first before adding the eggs.
Make use of leftovers by using leftover cubed ham or shredded roast beef instead of the bacon.

I love these. This is one of my favorite breakfasts. We call foods wrapped in flour tortillas, burritos and in corn tortillas they are tacos. Bacon and egg (no cheese) is my "go to". Sometimes, I like to cut up some Spanish chorizo or some Mexican chorizo , add some rice, sauteed onions or other veg and a about a teaspoon of vinegar.
