Bacon and egg breakfast tacos

    Pack your morning with protein and a bit of Mexican inspiration! No one ever said tacos need to be for supper, and with this recipe you'll be convinced they're just as great in the morning!

    Serves: 6 

    • 6 eggs
    • 50g finely chopped streaky bacon, cooked
    • 30g butter
    • 85g Cheddar cheese, diced
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 6 flour tortillas
    • salsa to serve (optional)

    1. Whisk eggs together in a bowl; stir in cooked bacon.
    2. Melt butter in a frying pan over medium heat. Add egg mixture; cook and stir until eggs are completely set, 2 to 3 minutes. Stir in cheese, salt and pepper.
    3. Wrap tortillas in damp kitchen paper or tea towel; microwave until warmed through, 30 seconds to 1 minute.
    4. Spoon about 4 tablespoons of egg mixture into the centre of each tortilla; fold sides to cover. Serve with salsa, if liked.


    Top with cubed avocado, halved cherry tomatoes and chopped fresh coriander.
    For a vegetarian version, cook some chopped red or green pepper and mushrooms in the butter first before adding the eggs.
    Make use of leftovers by using leftover cubed ham or shredded roast beef instead of the bacon.

    Corn tortillas for tacos and flour tortillas for burritos. I make this often for breakfast. I especially like a bacon and egg burrito with rice added.
