Vegetable Stock Rice with mixed vegetables

    A basic vegetable Stock rice. I use it as a side with spring rolls, and alongside Yorkshire puddings and corn on the cob

    • White Long Grain Rice (as preferred)
    • Frozen Mixed Vegetables (as preferred)
    • Knorr Vegetable Stock Cubes x2


    1. Optional: Rinse Rice in a sieve to get rid of some of the starch.
    2. Place everything in a medium sized pot together.
    3. Pour boiling water into the pot (hint: pour the water onto the stock cubes to aid flavouring)
    4. Bring to boil and watch for around 2 minutes
    5. Simmer at medium heat, stirring at regular intervals, until the Rice has completely absorbed the stock water. No need to drain
