Family Special Vegetable Soup

    The recipe that has been passed down from my grandmother. No changes whatsoever.

    • 3 Carrots
    • 1/2 an Onion
    • 1/3 of a Red Pepper
    • 3 Celery Sticks
    • 3 Knorr Vegetable Stock Cubes
    • 2-3 Handfulls of Barley


    1. Peel the carrots and cut them into circles.
    2. Peel and chop the onion as you wish
    3. Cut the red pepper as you wish
    4. Cut the celery sticks as you wish
    5. Place the barley in a sieve, thoroughly soak and reserve
    6. Place all the vegetables in a large pot and pour boiling water up until it goes just above the height of the vegetables
    7. Simmer on medium heat for 15 minutes
    8. Insert the stock cubes and the barley
    9. thoroughly stir and continue to simmer for 30-45 minutes depending on how you like your veg cooked
    10. Optional: Blend if preferred


    Goes well with oven baked crusty rolls.
