My Version Minestrone Soup

    I basically looked at my recipe book and altered it slightly.

    • 1/2 a tin of chopped tomatoes
    • 1/3 of a Courgette
    • 1/2 an Onion
    • 2 Carrots
    • 2 Handfulls of Frozen Peas
    • 2-3 Handfulls of Conchiglie
    • 2 Knorr* Vegetable Stock Cubes


    1. Cut the courgette, carrot and onion as prefered
    2. Put the tinned tomatoes, vegetables, stock cubes and around 500ml of boiling water in a large pot. Simmer on medium heat for around 15 minutes
    3. Cook the conchiglie as prefered. Then place into the large pot along with the peas add more water if required. Continue to simmer for around 30-45 minutes.
    4. Best served not blended
