Halloumi saganaki

    Halloumi is pan-fried in olive oil and finished with fresh lemon juice and dried oregano for a tangy, salty and savoury meze.

    • 2 tablespoons extra virgin olive oil
    • 1 pack halloumi cheese, cut into 5mm slices
    • 1 to 2 lemons, juiced
    • 1 generous pinch dried oregano

    1. Heat the olive oil over medium heat in a frying pan big enough to fit all 8 or so halloumi slices (20 to 23cm in diameter).
    2. Once the oil is hot but not smoking, add halloumi. Cook till well browned on the bottom, then flip and cook the other side till browned. Once browned, pour over lemon juice and let reduce slightly.
    3. Remove from heat and sprinkle with oregano. Serve hot with crusty bread for mopping up the pan juices.
