Place potatoes into a large pot and cover with salted water; bring to the boil. Reduce heat to medium-low and simmer until they begin to soften, about 10 minutes; drain.
Heat bacon fat in a large pan over medium-high heat; cook and stir potatoes in the hot fat until golden brown, about 15 minutes. Stir in sliced wild garlic leaves and chopped cooked bacon; season with salt and black pepper. Continue cooking until the garlic leaves are soft, about 5 minutes.
