Fried potatoes with wild garlic

    Sliced potatoes, wild garlic leaves (aka as bear's garlic) and bacon are pan-fried in this delicious springtime side dish.

    Serves: 4 

    • 5 large potatoes, peeled and sliced
    • 2 tablespoons bacon fat, reserved from cooking bacon
    • 6 wild garlic (leaves only), thinly sliced
    • 5 slices cooked bacon, chopped
    • salt and ground black pepper to taste

    1. Place potatoes into a large pot and cover with salted water; bring to the boil. Reduce heat to medium-low and simmer until they begin to soften, about 10 minutes; drain.
    2. Heat bacon fat in a large pan over medium-high heat; cook and stir potatoes in the hot fat until golden brown, about 15 minutes. Stir in sliced wild garlic leaves and chopped cooked bacon; season with salt and black pepper. Continue cooking until the garlic leaves are soft, about 5 minutes.

    5 large potatoes was way too much for this recipe. I also over-cooked mine but that was my fault, not the recipe! What I ended up with was the consistency of a baked potato, but we were ok with that and not bad for a first try! We have wild onion growing in our backyard and my 12 year old wanted to try cooking with them, and this recipe was perfect for that.  -  16 Apr 2018  (Review from Allrecipes US | Canada)
