Raspberry clafoutis

    If you have fresh raspberries, this quick and easy French dessert can be made with ingredients you probably already have in your cupboards and fridge.

    Serves: 6 

    • 60g plain flour
    • 75g caster sugar
    • 3 eggs
    • 3 tablespoons butter, melted
    • 90ml milk
    • 1 squeeze lemon juice
    • 250g fresh raspberries
    • 2 tablespoons icing sugar, or to taste

    1. Preheat oven to 180 C / Gas 4.
    2. Whisk flour and caster sugar together in a bowl. Whisk in eggs and melted butter. Pour in milk and lemon juice; whisk until mixture is very smooth, about 3 minutes.
    3. Pour mixture into an oval or round baking dish. Scatter raspberries on top.
    4. Bake in the preheated oven until puffy and golden, about 30 minutes. Let cool for about 15 minutes. Dust with icing sugar.
