    Serves: 4 

    • 1 (400g) tin broad beans
    • 2 tablespoons olive or vegetable oil
    • juice of 1/2 lemon
    • 1 onion or 2 shallots, minced
    • 2 garlic cloves, minced
    • 1/4 cucumber, diced
    • 1/2 green pepper, diced
    • 1 tomato, diced
    • minced fresh parsley
    • salt to taste
    • ground cumin to taste

    1. Drain the beans and place in a pan over medium heat; cook and stir until heated through.
    2. Add oil and lemon juice and bring to the boil.
    3. Add onion, garlic, cucumber and pepper and cook for 3 minutes, stirring.
    4. Remove from heat, add tomato and parsley and stir to combine. Season with salt and cumin to taste.
    5. Serve warm with pitta bread.
