Slow cooker potato and cauliflower mash

    Chopped potatoes and cauliflower simmer in stock in the slow cooker before milk, butter and soured cream come along to add the creaminess component for a delicious side dish.

    Ingredients
    Serves: 12 

    • 1.2kg potatoes, peeled and cubed
    • 240ml chicken stock
    • 1 cauliflower, chopped
    • 60ml milk
    • 60g butter, softened
    • 60ml soured cream
    • 1 tablespoon ground black pepper, or to taste
    • 1 teaspoon garlic powder
    • 1/4 teaspoon paprika
    • salt to taste

    Method
    Prep:15min  ›  Cook:6hr10min  ›  Ready in:6hr25min 

    1. Combine potatoes and chicken stock in a slow cooker.
    2. Cook potatoes on Low for 3 hours. Add cauliflower and continue cooking on Low another 3 hours.
    3. Stir milk, butter, soured cream, black pepper, garlic powder, paprika and salt into the mixture. Mash with a potato masher or blend with an immersion blender to desired consistency.
    4. Continue cooking until hot, about 10 minutes more.

    Made a batch. Mom and I both loved it. But had alot of leftovers which we wanted. 2 days later found LISA B7 recipe for Potato Spinach Cassrole but didn't want to be troubled with making the mashed potatoes so I used the leftover Pots and Cauliflower omitting the butter in LISA B7 recipe.     AWESOME!! Perfect for a feast, when you need the oven for other dishes. I used 5 lbs potatoes, skins on, and omitted the cauliflower. I used Greek yogurt instead of sour cream. Hearty and delicious!!! Thanks  -  11 Aug 2014  (Review from Allrecipes US | Canada)

    I had a 2 lb bag of potatoes that needed to be used and also a head of cauliflower I did not want to go bad. So after looking around the internet for a mashed potato and cauliflower recipe I went back to my trusted All Recipes site and here it is! Chose to make this with out Christmas Eve dinner of ham and fixings and it was a hit!
