This side dish tastes just like stuffed tomatoes but isn't one bit fiddly. A great use for blemished or over-ripe tomatoes you might have lying in the fridge!

4 tablespoons butter
6 slices stale bread, crumbled
1 small onion, chopped
1 clove garlic, minced
725g ripe tomatoes, chopped and drained
1 teaspoon salt
1/4 teaspoon dried sage
1/4 teaspoon dried basil
1/8 teaspoon freshly ground black pepper

Melt butter in a large pan over medium heat; cook and stir breadcrumbs, onion and garlic in hot butter until browned, 7 to 10 minutes. Add tomatoes; season with salt, sage, basil and pepper. Continue cooking until the tomatoes are hot, another 7 to 10 minutes.
