Unstuffed tomatoes

    This side dish tastes just like stuffed tomatoes but isn't one bit fiddly. A great use for blemished or over-ripe tomatoes you might have lying in the fridge!

    Serves: 4 

    • 4 tablespoons butter
    • 6 slices stale bread, crumbled
    • 1 small onion, chopped
    • 1 clove garlic, minced
    • 725g ripe tomatoes, chopped and drained
    • 1 teaspoon salt
    • 1/4 teaspoon dried sage
    • 1/4 teaspoon dried basil
    • 1/8 teaspoon freshly ground black pepper

    1. Melt butter in a large pan over medium heat; cook and stir breadcrumbs, onion and garlic in hot butter until browned, 7 to 10 minutes. Add tomatoes; season with salt, sage, basil and pepper. Continue cooking until the tomatoes are hot, another 7 to 10 minutes.
