Scrummy carrot and courgette soup

    I made this soup when I had a shed load of carrots that I didn't know what to do with. Turned out to be very tasty! Really nice with cheese topped French bread.

    Serves: 8 

    • 30g butter
    • 3 small onions
    • 7 medium carrots, peeled and chopped
    • 2 courgettes, chopped
    • 2 garlic cloves, crushed
    • 1 pint of chicken or vegetable stock
    • 1 or 2 glugs of Worcestershire sauce
    • smoked paprika to taste
    • 1 teaspoon mustard powder
    • freshly chopped fresh herbs or a pinch of dried mixed herbs
    • salt and pepper to season

    1. Melt butter in a large saucepan. Add chopped onion, carrots and courgette; cook and stir until onions have softened. Add garlic and cook for 1 minute.
    2. Add stock and bring the soup to the boil.
    3. Reduce heat to a simmer. Add Worcestershire sauce, paprika, mustard and herbs to the soup. Simmer for 20 minutes or until the vegetables are tender.
    4. Remove pan from heat and blitz the soup until smooth. Return pan to heat and season to taste with salt and pepper. Enjoy!
