Chicken hearts

    Mauritius is known for snacks called 'Gajaks', they're enjoyed alongside strong beverages or soft drinks. They're always present at parties or just hanging out with family!

    • 1 kg chicken hearts
    • 2 onions sliced
    • 5 cloves of garlic
    • 3-4 green chilliest kept whole but split
    • 1 tbsp fresh curry leaves
    • 1 1/2 tsp ginger garlic paste
    • Salt
    • 1-2 Tbsp Oil


    1. Wash the chicken hearts thoroughly add to a hot pan, add a little salt and let it cook on it on a medium heat covered. Let the water dry out before adding anything else.
    2. Once the liquid has dried out add the onions, fresh garlic and ginger and garlic mix with the oil. Fry it together. You want the onions and garlic to catch colour it adds to the flavour.
    3. Add the curry leaves and green chillies and let it all mix together. Season with salt.
    4. When it's all mixed and the chillies have caught colour from frying, serve in a bowl with fresh baguette a glass of something you enjoy and tuck in! :)
