Pickled onions

    A tangy and easy little condiment to spice up any dish. Particularly delicious on top of beef burgers, hotdogs or in cold roast pork sandwiches.

    Serves: 6 

    • 1 red onion, finely sliced
    • 120ml red wine vinegar
    • 3 tablespoons white vinegar (or apple cider vinegar)
    • 1 1/2 tablespoons salt
    • 2 teaspoons granulated sugar

    Prep:5min  ›  Cook:25min  ›  Extra time:30min  ›  Ready in:1hr 

    1. Bring the sliced onion, red wine vinegar, white vinegar, salt and sugar to the boil in a saucepan over medium-high heat. Remove from heat and allow mixture to steep until the onion is tender, about 20 minutes. Cool completely before serving.

    Hubby is eating these straight out of the fridge! We have had them on grilled salmon and burgers and will have them on hot dogs and sandwiches too! We both prefer paper thin rings instead of chopping the onion. There may be a mistake on the recipe, way too much salt and way too little sugar. I ended up with 1/2 teaspoon salt and 4 Tablespoons sugar. And DH is eating them straight from the fridge! I said that again. . .
