Place apples in a pan with the sugar and cook on medium heat till the apples are soft. Keep watching as they can burn. You might want to mash them a little depending on how you like your filling (I prefer mine chunky).
Pour in a baking dish. Put to the side and make the crumble. Follow the instructions on the crumble mix packet. If the crumble mix calls for butter, just add vegan butter to keep the crumble mix vegan.
Sprinkle the mix over the apple mixture and bake in the oven according to packet directions until nice and golden.
