Fried sukuma wiki

    Sukuma wiki is a leafy vegetable that is grown in Tanzania, Kenya and many parts of East Africa. Its Swahili name, Sukuma wiki, is often likened to collard greens in English.

    Ingredients
    Serves: 2 

    • 1 bunch (10 stalks) sukuma wiki
    • 2 tablespoons corn oil
    • 60g chopped red onion
    • 80g fresh chopped tomatoes
    • salt and pepper to taste

    Method

    1. Wash the sukuma wiki under cold running water. Cut it into very fine strips.
    2. Heat the oil in a frying pan. Add the onion and cook till light brown. Add the tomatoes and cook till it forms a paste. Then add the sukuma wiki and fry until wilted, about 4 to 5 minutes. Season with salt and pepper and stir for few seconds. Remove remove from the heat and serve.

    Tip

    Serve the sukuma wiki with Ugali, a polenta-like dish, or other starches.
