Stewed carrots

    This is a traditional Polish side dish, usually served with chicken. The carrot is soft and sweet, creamy and delicate. Kids love it!

    Serves: 4 

    • 4 large carrots, peeled and finely diced
    • 115ml water, or more if needed
    • 1 tablespoon unsalted butter
    • 1/2 teaspoon salt
    • 1 teaspoon lemon juice, or more to taste
    • 1 teaspoon sugar
    • 1 teaspoon plain flour

    1. Place carrots in a small pan and add enough water to cover; add salt and bring to the boil over low heat. Cook for 20 minutes, stirring from time to time, until very soft.
    2. Add lemon juice and sugar. Sprinkle flour on top and mix well to achieve a smooth mash.
    3. Cook for another 5 minutes until the mixture thickens a bit more. Serve.
