Salmon roll

    A simple and quick party nibble made of wholemeal bread, salmon and cream cheese that lends itself to be prepared ahead of time, as it needs to be chilled till firm.

    Serves: 4 

    • 4 slices wholemeal or seeded bread
    • 1 packet smoked salmon
    • cream cheese, softened, to taste
    • salt and black pepper to taste

    1. Flatten the bread slices and cut off the crusts. Overlap the bread to form a square.
    2. Place the bread on a large sheet of cling film. Spread cream cheese over the bread and top with smoked salmon. Season with salt and pepper.
    3. Using the cling film, roll up the bread to form a sausage shape.
    4. Chill in the fridge for 2 hours until firm, then remove and slice thinly.
