These thin crepes, filled with a sweet lemon-quark mixture are a traditional Polish dessert that both adults and children love!

250g plain flour
a pinch of salt
butter for frying, as needed
300g quark cheese
2 tablespoons thick Greek yogurt
zest of 1/2 lemon, or more to taste
a dash of lemon juice
1 tablespoon vanilla sugar (optional)

To make the crepe batter: Mix plain flour, eggs, milk and salt in a large bowl until well combined (it's easier to use electric beaters if you have them). The crepe batter should be runny, similar to single cream.
Heat a wide pan over medium-high heat and add a knob of butter. Pour a ladle of crepe batter into pan, tilting to completely coat the surface of the pan. Cook 2 to 5 minutes, turning once, until golden. Repeat with remaining butter and crepe batter.
In a bowl, combine quark with yogurt, lemon zest, lemon juice and vanilla sugar. Mix with a fork until well combined. Add more sugar to taste if necessary.
Spread quark filling over crepes and fold in half, then again in half to form triangles. You can also just roll them up.
