    Makes: 10 star biscuits

    • 200g butter, softened
    • 350g caster sugar
    • 1 tablespoon vanilla sugar
    • 3 teaspoons ground ginger
    • 2 eggs
    • 250g plain flour
    • 100g potato flour (or potato starch)
    • 2 level teaspoons baking powder
    • 1 pinch of salt

    1. In a bowl, combine butter, sugar, vanilla sugar, ginger and eggs. Beat with electric mixer until all ingredients are well combined and sugar is almost completely dissolved.
    2. Add flour, potato flour, baking powder and salt. Mix with your hands until smooth dough forms. Form into a ball, wrap in cling film and refrigerate 2 hours.
    3. Preheat oven to 180 C / Gas 4. Lightly grease a baking tray.
    4. Roll out the dough on a lightly floured surface to 1/2cm thickness. Stamp out biscuits using star-shaped cookie cutters. Transfer onto prepared baking sheet.
    5. Bake for 15 minutes in preheated oven. Once cooled, sprinkle with icing sugar.
