Faworki (Polish deep fried Carnival twists)

    Faworki, or chrusciki, are Polish deep fried pastries served on Fat Thursday before Lent starts. This is a traditional recipe, straight from my grandma! You need a meat grinder for this recipe.

    Serves: 20 

    • 600g plain flour
    • 1 tablespoon icing sugar
    • 1/3 teaspoon salt
    • 1 tabblespoon butter
    • 2 eggs
    • 120g soured cream
    • 1 tablespoons vodka
    • 1l vegetable oil for frying
    • icing sugar for dusting

    1. Sift flour onto your work surface. Add icing sugar, salt and butter. Mix with your fingers till it has the consistency of coarse breadcrumbs.
    2. Add eggs, soured cream and vodka and mix vigorously with your hands till smooth.
    3. Pass the mixture through the meat grinder which makes the pastry especially light and airy.
    4. Mix quickly with your hands just to pull everything together again. Roll out thinly and sprinkle with a little flour so it doesn't get sticky.
    5. Cut into strips 10cm long and 3cm wide. Make a 2cm cut in the centre of each strip. Take one end of the strip and pull it through the cut to create a twisted appearance.
    6. Heat the oil in a heavy pot.
    7. Fry the pastries in the hot oil till golden on both sides. Remove with a slotted spoon and transfer on kitchen paper to degrease.
    8. Sprinkle generously with icing sugar and serve promptly. Like all donuts, they taste best fresh.
