Avocado breakfast sandwich

    16 min

Avocado combines with cheese and egg for a satisfying breakfast sandwich that's vegetarian to boot.

    4 people made this

    Serves: 1

    • 1 tablespoon olive oil
    • 2 large eggs
    • salt and ground black pepper to taste
    • 1 tablespoon butter, softened
    • 2 slices bread
    • 30g Swiss cheese, sliced
    • 30g Cheddar cheese, sliced
    • 1/2 ripe avocado, sliced

    Prep:10min  ›  Cook:6min  ›  Ready in:16min

    1. Heat olive oil in a frying pan over medium heat. Crack eggs into pan; cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.
    2. Spread butter onto 1 side of each bread slice.
    3. Heat a frying pan over medium heat. Lay bread slices in the hot pan, butter-side down. Quickly layer Swiss cheese, 1 fried egg, Cheddar cheese, 1 fried egg, avocado and remaining bread slice, butter-side up. Carefully flip sandwich to grill other side until golden brown, 3 to 4 minutes.
    4. Remove sandwich from pan and cut in half.

    Cook's note

Double recipe to make two sandwiches, which would increase avocado to one full avocado vs half. You can also use one full avocado on one sandwich if you are like me and love avocados!

I used 2 slices of marble rye bread and the cheese I had on hand Monterey Jack and Vermont sharp cheddar. I fried the eggs on a griddle over my stove using my little veg oil then layered the buttered bread and layered egg, cheese and avocado. It was delicious!  -  31 Dec 2017  (Review from Allrecipes US | Canada)

Will have hubby make again for sure. You don't need all the egg. We used 3 eggs which was plenty. Next time we'll try some bacon & only use 2 eggs. We didn't have Swiss cheese so used Gruyere which I think I'd stick with now with the Cheddar cheese. Hubby did say he'll mash the avocado though because with it sliced it slid all over trying to come out from inside the bread.  -  11 Mar 2018  (Review from Allrecipes US | Canada)

One of our favorites and very easy. We’ve had it several times now.  -  09 Mar 2018  (Review from Allrecipes US | Canada)
