Baked Italian meatballs

    In this casserole dish, ready-to-cook meatballs are baked in a rich tomato sauce with a oozy cheese topping.

    Serves: 6 

    • 1 white onion, finely chopped
    • 2 cloves garlic, crushed
    • 1 tablespoon olive oil
    • 1 tablespoon red wine vinegar
    • 1 (600g) jar passata
    • 2 tablespoons tomato puree
    • 1 tablespoon brown sugar
    • 1 bay leaf
    • 24 ready-to-cook beef meatballs
    • 100g mascarpone cheese
    • 250g mozzarella cheese

    1. In a saucepan fry onion and garlic in olive oil till softened.
    2. Add red wine vinegar, passata, tomato puree, brown sugar and bay leaf. Simmer for 20 minutes.
    3. Whist sauce is simmering brown the meatballs all around in a frying pan.
    4. Mix together 200g of the Mozzarella cheese and the Mascarpone.
    5. Preheat oven to 200 C / Gas 6.
    6. Put the meatballs in a large ovenproof dish. Pour the sauce over them and blob on the cheese mix. Sprinkle with the rest of the mozzarella.
    7. Bake in the preheated oven until bubbly, about 30 minutes. Serve with pasta and vegetables.
