Three bean salad

    Three different types of beans are tossed with red onion, peppers, celery, fresh coriander and salad dressing to make this tasty and colourful dish that's perfect for a picnic.

    Serves: 6 

    • 1 (400g) tin black beans, drained
    • 1 (400g) tin kidney beans, drained
    • 1 (400g) tin chickpeas, drained
    • 1 green pepper, diced
    • 1 large red onion, diced
    • 1 bunch fresh coriander, chopped
    • 1 celery stalk, diced
    • 2 tablespoons Italian-style salad dressing
    • 1 lemon, juiced
    • salt and ground black pepper to taste

    1. Mix black beans, kidney beans, chickpeas, green pepper, red onion, coriander and celery in a large bowl. Add salad dressing, lemon juice, salt and pepper; toss to coat. Let stand about 5 minutes for flavours to blend. Chill if desired.

    I really like this recipe. I must include that I made it the first time without onions since I did not have any available and it turned out great. The second time I made sure to include the large, red onion and it was a bit too strong for my husband and I.     5.4.16 I used a lime instead of a lemon (what I had on hand) and Bernstein’s Light Cheese Fantastico dressing (a very light dressing that tastes like Italian with parmesan, romano & provolone cheeses added) which I buy at Costco instead of Italian dressing. Tasted it, thought it was a little weak in flavor, so I about another Tbsp of dressing, and some Sriracha® Hot Chili Sauce which gave it that little zing I was looking for.
