Hamantaschen are triangular pastries that are usually filled with jam. The name means Haman's Ears (oznei Haman in Hebrew).

500g plain flour

200g caster sugar
250g butter or margarine, at room temperature
1 pinch vanilla sugar
jam for the filling

Put the flour in a bowl and make a well in the centre. Add the baking powder, salt, sugar, butter and vanilla and swiftly mix with your hands until a smooth dough forms. Wrap in cling film and place in the fridge overnight.
Preheat the oven to 180 C / Gas 4. Roll out the pastry 3 to 5mm thick and cut out circles of 10cm in diameter.
Place a teaspoon of jam in the centre of each circle.
Fold over the sides to form a triangle.
Brush the edges with egg yolk.
Place each piece on a baking tray lined with baking parchment.
Bake in the preheated oven until baked through but not darkened, about 15 minutes.
