Hamantaschen (Purim pastries)

    Hamantaschen are triangular pastries that are usually filled with jam. The name means Haman's Ears (oznei Haman in Hebrew).

    Serves: 20 

    • 500g plain flour
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 200g caster sugar
    • 250g butter or margarine, at room temperature
    • 1 pinch vanilla sugar
    • jam for the filling
    • egg yolk for brushing

    1. Put the flour in a bowl and make a well in the centre. Add the baking powder, salt, sugar, butter and vanilla and swiftly mix with your hands until a smooth dough forms. Wrap in cling film and place in the fridge overnight.
    2. Preheat the oven to 180 C / Gas 4. Roll out the pastry 3 to 5mm thick and cut out circles of 10cm in diameter.
    3. Place a teaspoon of jam in the centre of each circle.
    4. Fold over the sides to form a triangle.
    5. Brush the edges with egg yolk.
    6. Place each piece on a baking tray lined with baking parchment.
    7. Bake in the preheated oven until baked through but not darkened, about 15 minutes.
